Sambal Matah is a traditional sambal or sauce from Bali that can be found in every Bali province. Matah means raw. Sambal Matah is a sauce that has raw ingredients. The ingredients are shallots, red chili, shrimp paste, salt, lemongrass, coconut oil, and lemon. It is usually a pairing dish that can be paired with basically anything.

Ayam Betutu is a Balinese dish of steamed or roasted chicken in rich bumbu betutu. This highly seasoned and spiced dish. Spicier version is available using extra-spicy sauce made from uncooked onion slices mixed with red chili peppers and coconut oil.

BABI GULING

 Babi Guling (in Bali it is called Be Guling) is a kind of food made from female or male piglets whose stomachs are filled with spices and vegetables such as cassava leaves and then baked while being rolled until cooked. Initially suckling pig was used for serving at both traditional ceremonies and religious ceremonies, but now suckling pig has been sold as a dish in stalls, restaurants, even certain hotels in Bali and other areas.
