Indigo, Hot Spot Japanese Restaurant in Canggu

Established in 2017, located in Berawa Canggu, Bali’s latest food paradise, they offer Japanese cuisine in a serene and intimate setting. The combination of modern indigo-colored furniture with a minimalist wooden interior, surrounded by Japanese shoji-style doors, will instantly foster a sense of peace as you settle down.

They use organic fruits and vegetables from local sources – Bali’s farmers from the Bedugul area, where the quality is premium. Most of their seafood, fish, and meat are imported directly from Japan. Scallop from Hokkaido, Hamachi from the northwest Pacific Ocean, Kagoshima beef Wagyu from Kagoshima prefecture, to name a few. Made from seaweed ‘Kombu’ and bonito flakes ‘Katsuo bushi’ their Dashi is homemade. Without dashi, the essential ingredient of Chef Shige’s cuisine, it’s nearly impossible to cook a true Japanese dish with authentic flavor. This is the heart of their cuisine!
